How to dry grapes at home in the traditional way

There are two different ways of drying grapes in the traditional way

  1. in the sun

Another way to make homemade raisins is to hang the bunches of grapes with string and place them in the shade and exposed to air currents or mild heat.

The advantage of this method is that you can do it even at home and at room temperature and have a clean and healthy raisin without dust.

This type of raisin stays green, but on the other hand, preparing this type of raisin is a bit time consuming and takes 50 to 60 days.

It is also not very economical because it needs suitable halls.

They must be stored in a cool place and exposed to moisture, and if we put them in the freezer, or on the terrace and porch, their texture will be dry, hard and rough due to excessive cold or due to the exchange of moisture-free air.

How to make sunny raisins

One of the easiest ways to make raisins is to use the sun.

In this method, it is enough to put the fresh grape clusters on a plastic or a tray and expose them to the sun, and when the grapes are dry and brown, collect them in a plastic container and in a Keep in a dry place.

The essential time for drying the berries is 15-20 days, depending on the type of grape and the weather conditions.

It is obtained by using acid solution.

The color of the prepared raisins is yellowish green and soft.

Because in this method, the green color of raisins is preserved during drying and after drying it is very soft and it does not have the dryness of sunny raisins.

First, place the arranged clusters in the basket and immerse them in the prepared solution for one minute.

They are then placed in containers to drain and then transferred to an area, but the clusters should not be stacked.

And for uniform drying of the berries, by turning the clusters, they try to dry the lower part of the berries.

In this method, the drying time is 5-8 days.

One day after picking the spikes, they prepare a acidic water solution.

For this purpose, in 100 liters of semi-hot water, add 5 kg of commercial powder of potassium carbonate and 2 liters of green oil and stir the solution.

The obtained solution, which has a milky color, is sufficient for 2500 kg of grapes.

If the days when the grapes are dry are cloudy and the sun is weak, and if the clusters contain large berries, they increase the amount of potassium carbonate and the same proportion of green oil in the solution.

Potassium carbonate creates grooves on grape seeds, which cause the grape juice to dry faster and the raisins to form faster, as well as yellowing the raisins. Green oil also softens raisins.
